I love making a big bowl of this clean eating chicken salad. It lasts me for the better part of a week and makes a great meal when I pair it with a vegetable of some sort. It’s perfect for my school lunches, and really, really tasty too!

I can honestly say that this is one of my better creations. It’s a very engaging and gratifying dish. That tablespoon of peanut butter punches you in the tongue with flavor, but doesn’t seem to actually impart the flavor of peanut butter. It’s magical!

As I refine my clean eating diet more and more, I’m finding that I’m really beginning to appreciate simple flavors in foods. No longer do I need the intense flavor of a bag of Doritos or the richness of a full-fat cheese sauce. So if you appreciate simple, honest flavors, I’ve got a great dish for you today.
I made an entire crock pot of this stuff, and it was gone in 1 day. Everybody had to have multiple bowls. We just couldn’t stop eating it!! Even my munchkin liked it, and he’s pretty tough to please these days.
So this is now officially a family favorite. I might even go so far as to say that this is my best recipe yet.
I’ve been purchasing whole chickens at Whole Foods for a while, and finally decided I’d try cooking one myself to save a few dollars. And if you don’t mind me saying so, I think I did better than Whole Foods! This chicken was down right delicious!
At the risk of sounding really arrogant, I’ve TOOOOOTALLY outdone myself with this one (Did you hear that California accent….. dude?). I mean, these turned out REALLY good! I’ve been wanting to make these for a while and finally knuckled down and made them. I don’t know what I was thinking waiting so long to make these.
