Salad For Lunch (Meal Prep Plan)

If you like having salad for lunch, it’s easy to prep several days at a time for work, school or at home lunches.

It’s been my experience that I have a much easier time sticking to a healthy eating plan if lunch is in the fridge, ready to grab during a busy day.

Salads are a great meal prep food. They last for nearly a whole week if you store them properly, they are filling and easily transported in a proper container.

Salad Lettuce

I made my own salad mix using a super greens mix, green cabbage, kale and a little iceberg lettuce for texture.

Use any blend of greens you prefer. Good options are:

  • Green leaf lettuce
  • Spring mix
  • Green or purple cabbage
  • Romain lettuce
  • Butter lettuce
  • Iceberg lettuce
  • Kale
  • Arugula

I sliced the rest of the cabbage for other meals this week. Probably dinner like Egg Roll In A Bowl.

Chicken Seasoning Ideas

I cooked salt and pepper chicken thighs in the air fryer and sliced them. You can use any seasoning you like. Just keep the dressing flavor profile in mind when seasoning the chicken. You can also use chicken breasts instead of thighs.

I added different types of beans, made Mustard Vinaigrette and used 2 cups of my salad mix per container.

For snacks, I made dehydrated zucchini chips (recipe coming soon) and froze some Restaurant Salsa (recipe coming soon) in my Souper Cubes for future snacks.
