Cranberry Walnut Salad Recipe

This cranberry walnut salad is the perfect, balanced salad in the flavor department. Some crunchy nutty flavor from the walnuts, some softer sweet flavor from the cranberries and some zing from the blue cheese crumbles. Delish!

I avoid dairy about 99% of the time. But there’s that 1% that does me in everyone once in a while. And it all revolves around my love of blue cheese. I avoid it most of the time because it sets off a craving in me that sometimes feels impossible to get under control. But every so often, I splurge and let myself have some. Life’s too short to NEVER eat something if you love it. At least in my book. But I do try to keep it healthy and this salad is living proof!

SPRING MIX SALAD RECIPES

I love using spring mix in my salads. Spring mix makes for a tasty and refresh salad that just has more substance than a salad make with romaine or iceberg. More nutrition too! In my experience, the darker the leaves you eat, the more nutrition you get. There are, of course, exceptions to every rule, but in general I find this to be a true statement. Spring mix has a wonderful combination of dark and darker leaves. Plus the leaves are small and easy to eat with a nice little crunch you would expect from a fresh salad.

SALAD IDEAS FOR DINNER

This is one of those salads you could easily make a full meal out of. Add some chicken or shrimp to this and you’ll have a very filling meal! The salad itself is super easy to put together and if you want to go the extra mile and make the blue cheese vinaigrette I used with this (also a super easy recipe!), you’ll be enjoying a quick and healthy dinner in no time!

Cranberry Walnut Salad

Ingredients

  • 4 cups spring mix lettuce
  • ¼ cup dried cranberries (fruit juice sweetened)
  • ¼ cup walnuts
  • ¼ cup blue cheese crumbles (the real stuff!)

Instructions

  • Combine all ingredients in a large mixing bowl and divide between to salad plates.
  • Enjoy with blue cheese vinaigrette, or your favorite dressing.
