Savory Oatmeal Recipe

One of my wonderful readers suggested this fabulous, clean eating savory oatmeal recipe.

I was really hesitant to try it. I’ve always eaten my oatmeal with fruit and other sweet things. The thought of savory oatmeal really kind of made my stomach turn. But I’ve been feeling a little brave in the kitchen as of late, so I went for it.

OMG! I swear to you, this is my new FAVORITE way to eat oatmeal. I could eat it this way every day for the next year and never get tired of it. It’s really that good.

Savory Oatmeal

A deliciously different way to enjoy your morning oatmeal. It’s almost like having risotto for breakfast!

Ingredients

  • ½ cup chopped red onion
  • 4 medium crimini mushrooms (sliced)
  • 1 cup cooked oatmeal
  • 1 tbsp. grated parmesan cheese
  • ½ tbsp. olive oil (best in an oil sprayer)

Instructions

  • Sauté your onions and mushrooms in a non-stick pan, using the smallest amount of oil you can get away with.
  • Stir in your oatmeal and blend well. Since the oats are already cooked, you only have to worry about getting them warm enough to melt the cheese.
  • Once the oats are hot enough, stir in the parmesan. Turn off the heat and allow the cheese to melt.
  • Continue stirring to distribute the cheese a bit.
  • Add salt and pepper to taste.

  1. I suffer from the same apprehension you seem to have had when putting the words “savory” and “oatmeal” in the same sentence. But these pictures and this recipe are making my mouth water. I’m going to have to give this one a try…

  6. Awesome! I just tried this, and it was great… although I had a tendency to go a little heavy on the salt. I think a small handful of fresh parsley would help curb that tendency.

  10. I tried this again this morning… I mixed two egg whites into the cold oats, and nuked them for a minute, then mixed really well before adding them to the mushrooms and onions in the pan. It was great! You didn’t even know they were there… great to get that bit of protein added in.

  13. I grew up on oatmeal loaded with butter and salt, so it was a stretch when I first tasted it with sweet things. I’ve been wanting a healthier savory version ever since, but for some reason hadn’t thought of adding veggies and cheese. Thanks for posting this!

  15. I’ve been playing with clean eating and GF and CF for a while but this is the year to get serious and this was my first meal of the year! Awesome! I added garlic powder. Tasty! My husband had a hard time suspending his expectations of oatmeal. Poor guy, he’s such a sugar baby but he ate it. Planning will be the key to successfully walking the walk!

  18. I made this today and really liked it. I want to have oatmeal in the mornings but, prior to this, I loaded it with butter and brown sugar to make it palatable — which totally defeats the attempt to eat healthier. I don’t know what crimini mushrooms are, so I used the sliced monterey mushrooms that come packaged in the produce section. I added an eggwhite as someone suggested, and topped it with mozzarella because I don’t like parmesan. That made it a little stringy so next time I’ll use grated jack and cheddar. Anyway, I liked how the oatmeal taste disappeared into the mushroom/onion taste and the texture was like scrambled eggs. Next time I’m going to try adding green chiles, as well.

  19. It was SUPER tasty….though a bit heavy first thing (for me)….perfect for mid morning after a good workout! 🙂 Definitely added to my breakfast menu!

    Beth – If you look at the bottom of the recipe, you will see that my stats are figured at nutritiondata.com. They are not necessarily completely accurate as I state there. But keep in mind that stats change with cooking. You don’t end up with 1/2 cup of oatmeal when it gets cooked.

I see it now- the recipe calls for 1 cup cooked oatmeal (I thought you were cooking the oatmeal throughout the recipe, meaning you were starting with 1 cup dry oats). 1 cup cooked oatmeal is about 1/2c. dry oats, so it works out and makes sense. My mistake, should have read the post more clearly 🙂

    This looks FANTASTIC, aside from the mushrooms! Any suggestions for substitutes for those of us who aren’t fans of them?

      Hanna – For this particular recipe, I would just leave them out. But you may have to make up for the loss in flavor with more of something else like onion or garlic.
