Chocolate Chip Cookies Recipe
These chocolate chip cookies are perfect for your sweet cravings!
Far be it from me to try and ruin anybody’s eating plan. But every once in a while, it’s nice to splurge and know you haven’t destroyed your plan completely. Am I right? I mean, if you can splurge and still call it “clean”, isn’t that better than drowning yourself in a bunch of “unclean” foods?
So I got a little creative. You see, my favorite cookie in the whole wide world is a chocolate chip cookie. What’s not to love? All that melty chocolaty goodness right out of the oven with a tall glass of milk… oh boy. I’m drooling. Pardon me while I go get a napkin.
There. All better.
Now, I have to tell you that I’m particularly proud of these cookies. Why? I wasn’t sure they were going to work when I first put them in the oven. I started with the recipe I used for Clean Eating Cookie Dough a while back. It was never meant to be baked. But with a couple minor adjustments, it did just fine!
Note: You will probably want to double this recipe due to the small yield. However, if you are just baking for yourself and maybe one other person, the yield should be just fine.

CHOCOLATE CHIP COOKIES RECIPE:
Chocolate Chip Cookies
Ingredients
- ⅔ cup almonds
- ⅓ cup cooked oatmeal (cooked and fully cooled)
- 3 tbsp. honey
- 1 tsp. pure vanilla extract
- 1 tsp. ground cinnamon
- ⅛ cup whole wheat pastry flour
- ½ cup dark chocolate chips (I use Lilly's or EnjoyLife)
Instructions
- Preheat oven to 325 degrees F.
- Mix everything except the chocolate chips in a food processor. You should have a nice wet, sticky dough when you're done.
- Using your spatula, scrape dough into your mixing bowl and mix in chocolate chips.
- Spoon onto a parchment lined cookie sheet.
- Bake for 20 minutes.
My batch only made 7 cookies!

Yes. I did that on purpose. I stated it in the recipe as well. Double up if you want a larger batch. I eat too many of them if they are around, so I cut down on the recipe to only make a few. 🙂
I don’t see why not.
Pumpkin would add a lot more moisture. You could play around with it, but I question if they would bake properly.

I’m confused. There is whole wheat pastry flour in this recipe. Did you mean something else?
Try spelt flour too! I avoid any wheat/wheat flour! This recipe was AMAZING!

The ones I used were by SunSpire. You’d have to contact them to see where they sell in your area. http://www.SunSpire.com. Amazon.com may have other brands, not sure. I’ll have to research that.

Oh.my.heavens. These were fabulous. And the only reason I say “were” is because they are GONE!! I accidentally used oatmeal that was fresh off the stove, and my chips semi-melted before baking……turned into chocolate chocolate chip cookies :). Can’t wait to make more!! Can you sub almond butter for the almonds? If so, what measurement should I use? Very excited to try this recipe!
I don’t recommend it, but you could certainly give it a try. Not sure on the measurements. Maybe just slightly shy of the equal amount?
I made these tonight and they are A M A Z I N G. I love the thick texture. I added the chocolate chips too soon so they turned out looking and tasting like brownies…which is totally fine with me.
When u say cooked is it 1/3 c dry oats cooked in 2/3 water like directions on package?
No, I mean 1/3 cup oats that are already cooked. I had leftovers in the fridge. 🙂
Mine were pretty good but… I didn’t have vanilla so I used almond extract and I think that’s where it went weird. It was just too nutty for my liking! I added in some flax seed and coconut bits and they blended in well. I mixed by hand because I was feeling lazy… Does the food processor help with the chunkiness? Thanks for the recipe will try again with vanilla!
Not sure what you mean by chunkiness. Sounds like something definitely went wrong there though. I definitely do not recommend using almond extract in these. You’re right, way too nutty!
