This delicious bacon sweet potato soup is a perfect meal for a chilly evening.

If you love sweet potatoes, then it’s not a far jump to assume you’ll love a good sweet potato soup. You get all that good sweet potato flavor, a smooth and creamy brothiness, plus anything else you choose to add for flavor or texture.
Sweet Potato Soup With Bacon
I’ve made several sweet potato soups over the years. But this is the first I’ve added bacon to, and I can’t say that I’m sorry. It was pretty darn delicious!
I personally used Applegate uncured turkey bacon (not paid to promote them), because there is no added sugar and the flavor is great. But you can use any bacon you feel good about eating.

What You’ll Need
5 cups chopped sweet potatoes – This is about 2 large potatoes, give or take. You’ll want to peel them and chop them. You can use any variety of sweet potato here. Even a Japanese (purple) sweet potato would work here.
4 cups chicken broth – Low sodium is best and look for broth with no added sugar (often called dextrose in meat products). It pays to read your ingredients here.
¼ tsp. ground nutmeg – The nutmeg really makes the soup here. It pairs well with the bacon and onions while still being a definitive and stand-alone flavor you can easily taste. It’s not overwhelming, but definitely there and definitely tasty. A little goes a long way with nutmeg, so make sure you level your measuring spoon with this one.
5 slices bacon – You’ll want to cook the bacon separately in whatever way you usually cook bacon. I made mine in my air fryer, but cooking it in a pan or in the oven is perfectly fine. Once cooked, you’ll want to chopped it into little bacon bits.
2 tbsp. maple syrup – The maple syrup isn’t overly sweet, but truly rounds out the flavor of this soup. So don’t skip it! And use the real stuff. Imitation is just never as good.
1½ cups chopped onions – sauté your onions separately in a skillet. The more you can caramelize them, the better. You have the option of blending these into the soup if you prefer not to have the chunks of onion in there. But I like the texture, so I left them as is.
How To Make Sweet Potato Soup

Peel the sweet potatoes with a potato peeler.

Chop the sweet potatoes.

Place the potatoes in a medium to large pot with the chicken broth and ground nutmeg. Bring to a medium boil and cook for about 20 minutes, or until the potatoes are fully cooked and soft.

Blend everything in the pot until smooth.

Add salt and pepper to taste

Stir in the maple syrup.

Add the cooked onions

Stir in the bacon and serve.
