If you need something more on the fun side for dinner or a party, these delicious potatoes are the perfect finger food! Serve a few with your favorite dipping sauce and everyone will be happy to dig in!
What Are Accordion Potatoes?
Somewhat similar to Hasselback potatoes, accordion potatoes are simply sliced in a way that they can easily be placed and cooked on a skewer. These are a fun party food, or even just a snack to have on the weekend.
Accordion Potato Skewers
While wooden skewers will work fine here (as you can see in the photos), next time I make these, I’ll be using metal skewers. Metal skewers just tend to hold up better and function better all the way around. Plus, there’s no worry of splinters.
Making Accordion Potatoes Ahead Of Time
You can make these ahead of time, up to a point. Prep and cut these, but then leave them in the bowl of water until you are ready to make them. This can be done as much as 3 days in advance (no longer!). Then when you are ready, proceed with the rest of the recipe.
Toppings For Your Accordion Potatoes
The sky is the limit with these potatoes. Pretty much anything that goes well with potatoes will work great here. Particularly sauces and dressings. Here are some ideas:
- Ketchup
- Mustard
- Mayo
- Ranch Dressing
- Thousand Island Dressing
- Roasted Garlic Vinaigrette
- Garlic powder
- Onion powder
- Melted butter or garlic butter. You can use vegan butter too for a dairy free dish.
- Sea salt
- Herbs – fresh or dried, such as parsley, chives, oregano or rosemary.
- Bacon – chopped into bits
- Parmesan cheese
- Sour cream
- Bbq sauce
About The Ingredients
Potatoes – Yellow or Yukon gold potatoes work best. Russet potatoes will work, but they don’t seem to crisp up as nicely on the edges.
Oil – I used coconut oil, but you can use olive oil or any other oil you prefer to cook with.
Smoked paprika – You can really use any spice or seasoning you like here. But smoked paprika is delicious!
Green onions – Here again, you can use any other fresh herb such as chives. See more suggestions above.
Ground black pepper – White pepper will work as well.
Salt – I used pink Himalayan salt. But use whatever you normally cook.
How To Make Accordion Potatoes
Step 1: Gather The Ingredients
Gather and measure all the ingredients.
Step 2: Peel & Slice The Potatoes
Peel the potatoes and slice them lengthwise to a thickness of ½ inch. (No thicker!)
Step 3: Cut The Accordion Slices
Take a potato slice and place it horizontally on a cutting board. Place a skewer stick on top and bottom of the potato and start cutting vertical cutting close to each other, making sure you use the wooden skewer sticks as a stopper. ( do not cut all the way through) repeat the same process on the other side and make diagonal cuts instead. The idea is to have one long side that is not cut along the edge. This holds the potatoes together.
Step 4: Skewer The Potatoes
Now, take your wooden skewer sticks and carefully insert them from bottom to top.
Step 5: Soak The Potatoes
Place the potatoes into cold water for at least 30 minutes. This process will remove the starch excess making the potatoes crunchier once you cook them.
Step 6: Season The Potato Skewers
Preheat the oven to 355°F. Dry the potatoes with a paper towel and place them on a parchment-lined baking sheet, baking dish or cookie sheet. Brush some oil over the potatoes on both sides with a basting brush and then sprinkle on the paprika.
Step 7: Bake
Sprinkle some salt & black pepper and place them in the oven for about 30 minutes or until they turn golden brown.
Step 8: Garnish
Once they are ready, top up with some freshly chopped spring onion and any sauce of your preference.
How To Make Accordion Potatoes In The Air Fryer
To air fry these potatoes, follow the same direction as above. When ready to cook your accordion potatoes place them in the air fryer at 375°F for 15-17 minutes, making sure to flip them at least once during the cooking process.
How To Store Leftovers
If packed well in an airtight container, these will last for up to 4 days in the fridge. Freezing is not recommended.
