20 Clean Eating Vegetarian Dinners

A lot of my readers are vegetarian and even more of you are interested in the Meatless Monday concept or are generally interested in reducing your meat consumption.

Since going 100% plant-based myself recently, it occurred to me that a roundup of some clean eating vegetarian dinners might be helpful for you guys. While I’ve given up all animal products, that’s not always realistic for some folks. Veganism is wonderful and the food is delicious and nutritious. But not everybody wants to be vegan. Some are perfectly happy to reduce their meat intake and focus more on vegetarian foods.

I’m all for this because any time you get more beans and veggies in your eating plan, you’re getting lots of fiber and nutrients. You can’t help but feel better when you give your body the foods it craves!
