These mac and cheese bites are a tasty way to fill those lunchboxes and keep the kids happy, all at the same time!
With the kids going back to school, I’m focusing on school lunch ideas this month. For the month of August, it’s gonna be nothing but ideas for filling those lunchboxes with healthy foods the kids will actually eat! Because it’s one thing to pack a healthy lunch, but another all together to get your kids to actually eat it.
WHAT TO DIP MAC AND CHEESE BITES IN
Every kid I know loves mac and cheese. And while you could certainly just put some in a bowl for their lunch, it will keep things fun and interesting if you turn it into dip-worthy finger food. These would be awesome dipped in ranch dressing!
Another good dip option is a healthy, homemade ketchup. Mac and cheese bites will always be good with ketchup!
HOW TO MAKE MINI PASTA MUFFINS
The process is pretty simple, actually. Once the pasta is cooked, it’s just a matter of mixing it with milk and cheese, scooping it into mini muffin pans and baking it.
HOW TO STORE MAC AND CHEESE BITES
These are not the best option for the freezer. They will freeze (obviously), but the pasta’s texture changes when it thaws. They become soggy. Your best bet is to make this in small enough batches to consume all of them within 5 days. Store them in the fridge in an air-tight container. Discard on day six. Be sure to store these without sauce on them as the sauce can often turn faster than these mini muffins.

MAC AND CHEESE BITES
Mac And Cheese Bites
Equipment
- Mini muffin pan
Ingredients
- 1 cup whole grain macaroni
- 2 tbsp. milk
- ½ cup shredded cheddar (or American cheese)
Instructions
- Preheat oven to 375 F.
- Cook pasta according to package directions until they are cooked al dente.
- Drain and mix in milk and cheese until melted
- Place mixture into a muffin tray and bake for 10-12 minutes or until they are bubbling.
- Let cool for 15 minutes and remove from tray.
- Serve with ranch or another favorite dipping sauce.
