This Red Pepper Egg Scramble is a wonderfully protein-based way to start your morning!

As I move along in this weight loss struggle with all its “ups and downs”, I’m starting to see that carbs play a huge role in weight loss.

Clean Eating Red Pepper Egg Scramble

Don’t panic, I’m not going to stop creating recipes full of clean, carby goodness, but I will be doing more low-carb recipes for several reasons…

The most important of which is that it really does make a huge difference in my blood sugar when I reduce carbs. And managing my blood sugar is my main motivation for eating clean in the first place. Insulin plays a major role in weight and/or weight loss.

I’m also learning (perhaps a little late in the game), that carbs, though healthy and very necessary for our bodies, are something that really does need to be managed in a clean eating diet. That’s not to say that everyone should live low carb, but it’s worth it to look at how many carbs you are actually consuming, and in what forms you are consuming them.

I recently started making it a point to eat only protein and veggies for breakfast. The difference in how I feel has been nothing short of amazing. Typically, by the time I get home from school with Mini Chef, I’m more than ready to lay down and take a nap right alongside him.

Great for bonding, bad for getting things done.

But I’ve found that if I eat protein and veggies for breakfast, that sleepy/drugged feeling just isn’t there. So for me, it’ worth it to get rid of the carbs in my morning meal. Besides, who says you can’t have a nice, warm bowl of fruity oatmeal for dessert instead?

So with that in mind, I will be starting a low-carb section on my blog here. I hope you find it useful.

PLEASE NOTE:
What I am talking about here is that I will be doing a few more low-carb recipes from time to time because I personally need to cut back a bit for my blood sugar. It’s a personal decision and I am in no way advocating that everyone should do this. But I also know that there are a lot of low-carb eaters out there, which is why I started this category.

Red Pepper Egg Scramble

A delicious breakfast scramble with minimal ingredients.

Ingredients

  • 2 large eggs
  • 1 large egg white (Or omit the two whole eggs and use 5 eggs whites to lower the fat)
  • ¾ cup chopped red bell pepper
  • cup chopped yellow onion
  • 2 tsp. olive oil
  • ¼ cup grated parmesan cheese (optional)

Instructions

  • In a skillet, sauté the onion and bell pepper in the olive oil until they just begin to become soft.
  • Add in the egg and stir continuously to scramble the eggs.
  • If using parmesan, stir in just after removing pan from heat.

    I’m with you! As much as I love carbs, and as much as I know that they make up a part of a healthy diet, they are absolute kryptonite for me. When I gain weight, it is almost always because of carbs. And I cannot lose weight without seriously cutting back on them.
    Love your blog! I’ve been using your recipes and my family is loving clean eating – much to my surprise. I was expecting a little more complaining but they’ve been very compliant. Just goes to show that healthy, whole food is ultimately more satisfying and tasty than junk.

  6. This recipe sounds yummy and I’m going to try it tomorrow! As for carbs, we all react differently. I find that I feel best when my diet is about 40-50% carbs, I try only to eat the complex carbs and stay away from simple carbs. It is challenging to say the least! Kudos to your for pinpointing the problem in your diet and making changes!

    Have you read the Carb Sensitivity Program by Dr Natasha Turner? It’s a really interesting read about the roe carbs play and how each of us has our own sensitivity levels to them. I’m by no means a Paleo eater but I think there’s a lot to be said for our societies over reliance on grains.

    I’m a nutrition student interested in food and it’s role in disease and prevention. I love your blog but had always been discouraged with so many high carb/high glycemic “clean” recipes (even with alternatives like oats and grain flours like spelt). Minimizing insulin response is so important to weight and overall health. I highly recommend Wheat Belly (Davis, William MD) – great book if you’re interested in the impact of today’s wheat products/gluten on the body, blood sugar, leading to weight gain, inflammation and disease. I thought I couldn’t live without wheat products, but it’s changed my life and I no longer struggle with weight, cravings, etc. Thanks for moving in this direction!

  9. I’ve been reading alot about slow carb too which I think is important because of the lack of fiber in most low-carb diets. So eating fiber rich low carb veggies/fruits is important and always eating protein first which will always minimize spikes. But it is sad but true, I always lose so much weight when I eat more low carb. This link for clean low carb flax meal bread is nothing short of amazing.

  14. Thank you for the lower carb options. I recently went low carb, high protein, and high fiber. Wow what a difference it makes. I have found out that although I LOVE carbs – they don’t love me. Of course I have carbs daily but I have changed them up dramatically and they are healthier and a lot lower than they used to be. I have found it really helps my sugar balance and also helps me feel less sluggish and lethargic. I have more energy now and that, I am told, is a sign that I don’t tolerate bad carbs very well. Learning all the time!
