The truth is, I love mayo. And now that I make it myself, I enjoy it on a somewhat regular basis (in moderation, of course). But there are many folks out there who simply don’t like the stuff. So for all of you that avoid mayo, I created this wonderfully tasty, clean eating egg salad!
It’s a very simple salad, that comes together quite quickly once the eggs are peeled, and tastes just dang delicious! No mayo needed. Promise!

This simple salad has plenty of protein and is so easy to make as a side dish for almost any meal!
- 2 large hard boiled eggs (chopped)
- 2 medium roma tomatoes (chopped)
- 1 tbsp. balsamic vinegar (or to taste)
- salt to taste
- fresh basil to taste (chopped)
Mix and serve.
