The truth is, I love mayo. And now that I make it myself, I enjoy it on a somewhat regular basis (in moderation, of course). But there are many folks out there who simply don’t like the stuff. So, for all of you who avoid mayo, I created this wonderfully tasty, clean eating egg salad!

It’s a very simple salad that comes together quite quickly once the eggs are peeled and tastes just delicious! No mayo needed. Promise!

  • 2 medium roma tomatoes (chopped)
  • 1 tbsp. balsamic vinegar (or to taste)
  • salt to taste
  • fresh basil to taste (chopped)

  1. This sounds great. I love tomatoes and balsamic together! One of my favorites are chopped eggs mixed with a little hummus and stuffed in a pita pocket. It’s a great snack on the go. Thanks for this recipe!

  2. My tomato and basil starts are up but it’s going to be awhile before I have these ingredients. I just can’t eat store tomatoes! And soon I should start getting farm fresh eggs again from a coworker, the chickens shut down in this severe winter and I don’t blame them!

  3. I can’t wait to try this, once I get some good tomatoes! I recently discovered a healthy twist on egg salad for those who can do dairy – swap in cottage cheese instead of the traditional mayo. There is very little change in flavor, and the texture of the cottage cheese matches the hard-boiled egg almost exactly. I like to add curry powder, black pepper, and just a splash of vinegar to mine. It is packed with protein!
