Carolina Gold BBQ Chicken Sandwiches Recipe (Instant Pot + Frozen Chicken!)

These delicious Carolina gold BBQ chicken sandwiches are a fabulous upgrade on traditional barbecue chicken sandwiches.

If you love a truly flavorful chicken sandwich, this is the one to try. It’s a wonderful blend of sweet and spicy, and the coleslaw added to the sandwich seals the deal.

In fact, I’ve mixed the chicken and coleslaw for a delicious chicken salad as the main course. No bread needed!

What Are Carolina Gold BBQ Chicken Sandwiches?

These sandwiches can be made in either an Instant Pot or a slow cooker. The chicken is made with Carolina Mustard Barbecue Sauce with extra garlic added.

They are topped with prepared coleslaw and enjoyed on a whole-grain bun of your choice.

While regular barbecue chicken sandwiches are usually made with tomato-based barbecue sauce, these are made with a spicy mustard-based sauce. And the flavor, at least in my opinion, is leaps and bounds beyond any regular barbecue sauce.

Crockpot Barbecue Chicken Sandwiches

If you want to make these in a slow cooker, put everything into a slow cooker instead of an instant pot. Your chicken should be thawed instead of frozen. Cook on low for 4-6 hours.

About The Ingredients

Frozen chicken breasts – Make sure you remove and absorption pads from the bottom of the chicken. Even if you have to thaw it a bit to get it off.

Carolina mustard barbecue sauce  – You’ll want to make your own. It’s delicious and you can make it in about 5 minutes. It’s super easy!

Garlic powder – I usually use garlic granules, but garlic powder works too. Whichever you usually use is fine.

Prepared coleslaw – I simply purchased some coleslaw mix and made my own coleslaw at home.

Burger buns – Any whole-grain burger bun will work. Check ingredient lists to find one without added sugar. The Alvarado Street bakery brand is excellent. (Not paid to promote them)

How To Make Carolina Gold BBQ Chicken Sandwiches

Place the frozen chicken in an instant pot.

Pour the Carolina Mustard Barbecue Sauce over the chicken.

Garlic powder sprinkled over the top of the frozen chicken and sauce in the Instant Pot.

Sprinkle the garlic powder over the sauce and chicken.

The Instant Pot lid, secured and ready to cook.

Secure the lid and close the vent.

The time on the instant pot set to high pressure for 20 minutes.

Press the manual button. Adjust pressure to high pressure and adjust time to 20 minutes.

Once cooked, shred the chicken using forks or an electric mixer.
