Spinach Quiche Recipe With Feta Cheese

This spinach quiche made with feta cheese and Mediterranean vegetables is a Mediterranean-style breakfast that will not disappoint. Every bite is a new flavor combination that never disappoints.

If you want something new for breakfast, this quiche does not disappoint. It’s quick and easy to put together and tastes amazing, thanks to all those deliciously flavored additions. It’s an incredibly versatile dish, and I’ll be giving you ideas below for how to customize it and make it your own.

Before anybody gets upset with me, yes, I know there is more to this recipe than spinach and feta. However, if you prefer, you can double up on the spinach and feta and use only that in this quiche recipe. I just couldn’t help but add some Mediterranean veggies. Feta cheese does that to me. So, really, this is actually a Mediterranean breakfast casserole. But let’s not worry about little things like titles. Let’s just get to the good part. The recipe.

What Is Quiche?

Quiche is originally a French dish. It’s a savory pie that uses eggs as its base. It often has a pastry-style crust that gets added, and any number of meats or veggies can find their way into this breakfast favorite. Anything from veggies to meats and cheese works great in quiche.

Quiche is typically served as a brunch food, but makes an excellent breakfast. I’ve even served it for dinner with a side salad, and it was wonderful. You can serve quiche warm or cold.

Can This Spinach Quiche Be A Crustless Quiche Recipe?

Yep! In fact, it is a crustless quiche recipe already. That said, you can use crust (and a regular pie pan) if you prefer. I just find it easier to make a crustless quiche in a casserole dish. I find they don’t stick as hard to a casserole dish as they do to a pie pan when there’s no crust involved.

Mediterranean Quiche

Yes, this is a Mediterranean quiche with Mediterranean flavors, and it’s wonderful. Again, if you prefer to stay true to the name of this recipe, you can use four cups of frozen spinach and a full cup of feta cheese crumbles to make a more normal spinach and feta quiche.

What Else Can I Add To Spinach Quiche?

Well, as you can see, there are a lot of things you can add. But I’ll give you even more ideas here. This is certainly not an exhaustive list. You can add all sorts of things to this recipe as you like. Fresh herbs are also wonderful additions here. I particularly enjoy fresh thyme.

The truth is, if you hate anything here, you can just leave it out or replace it with something else in any amount you choose. As I said, this recipe is 100% customizable, so have some fun with it. Here are some ideas:

  • Grated Parmesan cheese
  • Bacon
  • Zucchini
  • Mushrooms
  • Leeks
  • Squash (summer squash works best)
  • Kale
  • Caramelized onions
  • Ricotta
  • Chives
  • Fontina cheese
  • Cauliflower (chopped small)
  • Mozzarella cheese
  • Sausage
  • Shallots
  • Sharp cheddar cheese
  • Swiss cheese
  • Pancetta

How Can I Make My Quiche Fluffier?

If you want to make the eggs lighter and fluffier, try adding a quarter cup of any of the following to the batter:

  • Milk
  • Half and half
  • Heavy cream
  • Unsweetened oat milk
  • Unsweetened almond milk

What Pie Shell Should I Use?

You can use any standard pie crust you prefer. But if you need some easy recipes, try one of these:

  1. Whole Wheat Pie Crust
  2. Oat Flour Pie Crust – Gluten-free.

Recipe Tips

  • The larger your casserole dish is, the thinner your quiche will be. I recommend using a smaller casserole dish or a 9-inch pie pan.
  • Thicker quiches may require some extra baking time, while thinner quiches will require a bit less.

Can This Be Made Ahead?

Yes, it can. If you want to put the raw mix together, you can mix it 2 days ahead and keep it covered in the fridge. Then bake it when you’re ready. It will keep for 3 days after baking.

Spinach Quiche Ingredients

Large eggs – These can be chilled or at room temperature.

Italian seasoning – This is a blend you can buy in the spice aisle. If you don’t have it, you can make your own.

Garlic powder – Or garlic granules.

Onion powder – Or onion granules.

Red onion – Chop this fine for the best texture.

Kalamata olives – Pitted, then halved or sliced. You can also purchase them pre-sliced for convenience.

Frozen spinach – You can use double the amount if you want to use fresh spinach. But I find frozen works best here. If you use fresh, you’ll want to wilt it in a skillet with some oil first. Baby spinach leaves work best.

Cherry tomatoes – Or grape tomatoes.

Crumbled feta cheese – I buy a block and crumble it myself. You can use cow, sheep, or goat feta (or any combination it comes in. I use a combo of sheep and goat and it’s delicious.

Olive oil – Extra virgin is best.

Salt and pepper – To taste at serving

How To Make A Spinach Quiche With Feta Cheese

Preheat your oven to 350°F.

Whisk the eggs well and add the spices. Set the bowl aside for a few minutes.

Add them to the egg mixture. Stir well to combine.

Bake for 45 to 60 minutes. The center should be solid when it’s done.

Storage

Store leftovers in the fridge, well covered, for up to three days.

Freezing

Freezing is not recommended for this recipe.

Reheating

This reheats well in a microwave, but can also be reheated in a pre-heated oven at 325 F. until warmed through. You might need to cover it loosely with foil to keep the top from burning.
