This clean eating tomato soup recipe is better than the canned stuff by a long shot!

Tomato soup gives me a level of comfort that few other things in life give me. Soup alone is a great comfort food, but TOMATO soup…. now that’s a comfy chair, warm blanket and a crackling fireplace all in one bowl. I’m relaxed just thinking about it.

What I love about this recipe, is that it’s so quick and easy to put together. So not only can you cook it last-minute, but it’s so easy it can only add to your level of relaxation! Oh boy. I should be a wet noodle momentarily…

Ingredients

  • 15 oz. can tomato sauce (no sugar added)
  • 1/2 cup chicken broth (no sugar added, low sodium - or homemade)
  • 1 cup water
  • 1 tsp. dried basil
  • 1/2 tsp. dried parsley
  • 2 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/4 tsp. celery seed
  • 1/2 tsp. ground black pepper
  • 1 bouillon cube (I used the Rapunzel brand from Whole Foods)
  • 1 cup organic soy milk (unsweetened - or regular milk)

Instructions

  • Combine all ingredients in a pot.
  • Bring to a soft boil and stir until heated through.

      Ruth – You can, but you’ll need to make up for it with other spices. The bouillon makes up a considerable amount of the flavor.

    Secondly, I want to make this for a vegan. Do you have any idea on how to replace the chicken stock?

  7. This looks so tasty! In the interest of using up things currently in my cupboard, I wonder if I could sub a big can of diced tomatoes pureed with an immersion blender instead of the tomato sauce? Just found your blog today, and I love it! Can’t wait to read more!

  8. Made this tonight and it was so easy and so yummy. I added a can of diced tomatoes just because we like the chunks of tomato. No more Campbell’s Condensed Tomato Soup! Yuck—doesn’t that just sound gross now??!

  9. I literally just finished this dish for dinner and it was amazing! I did add a can of chunky tomatoes and a little whole wheat flour to thicken it up. To make it a complete meal, I added lean ground turkey and a little cheese to top it off. Delicious!! This is definitely a meal to make in bulk and freeze portions for an fast, easy, healthy lunch/dinner. Thanks so much for sharing!

    I just made this for lunch. It was so easy and one of the best soups I’ve ever had. Even my 10 year old, who is our pickiest eater and tomato-hater, came downstairs and said it smelled good and ate a whole bowl of it. This will now be on our weekly lunch menu.

      Batty – I’ve never tried to freeze it. You could experiment with a small amount by freezing it overnight and thawing again in the morning. It’s just so yummy that it never lasts long enough to freeze around here!

    I gave this a try yesterday and I am wondering if I heated it up too quickly or too hot because my milk curdled instead of being creamy. We still ate it and enjoyed the flavor but I would love to try it again and get it right. Any ideas? 🙂

    No. Typically, broth is just plain broth with no flavoring. Stock has flavoring like spices and veggies. That said, I often confuse the two. And even the box I buy at the store says chicken broth when really, it’s stock. But that’s the difference.

      I used a vegetable bouillon, but chicken will work too if you can find a clean one.

  21. Would I be able to use homemade almond milk or would that just be weird? Sorry, bit of a cooking newb.

      Sarah – You could certainly try it, but I would think you would get a lot of separation and there wouldn’t be much creaminess to it. I think coconut milk would be a better option. Sounds odd, but it’s actually pretty tasty. I made a spaghetti sauce using coconut milk and it was delicious.
