Sweet Potato Flatbread Recipe (Air Fryer Or Stove Top)

This sweet potato flatbread makes the perfect accompaniment to nearly any soup. It’s great with sweet or savory toppings and it’s super quick and easy to make!

What Is Flatbread?
Generally speaking, flatbread is an unleavened bread. Meaning, it is made without yeast.
Flatbread usually has limited ingredients. Namely, flour, water, and salt.
It is rolled out flat and typically cooked in a pan or in a brick oven. Pita bread is a form of flatbread.
Sweet Potato Flatbread
This particular recipe is one of my favorites because it’s made with three simple ingredients that don’t affect my blood sugar. Those ingredients are mashed sweet potato, oat flour, and salt.
Flour Ratios For Sweet Potato Flatbread
I will preface this by saying that these measurements are not exact. A recipe like this is one of those recipes where you keep adding a little of this and a little of that until you get it just right. But these ratios are a good starting point. Adjust the amount of flour as needed to get a decent, soft dough. Each flour behaves differently.
No matter what flour you use, make sure you have at least 1 extra cup for your work surface and roll out the dough.
- Regular flour (white or whole wheat)
1 cup flour to 1 cup sweet potato. - Oat flour (gluten-free or regular)
1¼ cup flour to 1 cup sweet potato - Coconut flour
¼ cup flour to 1 cup sweet potato - Almond flour
1½ cups flour to 1 cup sweet potato

Salt For Sweet Potato Flatbread
Any type of salt will work for this. You can use anywhere from ½ a teaspoon to 1 teaspoon per 1 cup of sweet potato. a ½ teaspoon will give you a barely noticeable saltiness. 1 teaspoon will be noticeably salty.
If you aren’t sure, you can start with ½ a teaspoon and then sprinkle a little on top when you eat the flatbread or eat it with a salty topping.
What You’ll Need To Make This Sweet Potato Flatbread
1 cup mashed sweet potato – You can cook these ahead of time. But if you cook your sweet potato right before you make this flatbread, you’ll want to allow time for it to cool down after baking. You need to be able to mix this by hand. So make sure it’s cool enough to touch.
Oat flour + extra – Use gluten-free if needed.
Salt – Any type you like.
Cooked, mashed sweet potato – This can be any variety of sweet potato you usually prefer.
How To Make Sweet Potato Flatbread

In a large mixing bowl, mash together all three ingredients. Start with the suggested amounts of flour and add more, a little at a time, as needed. Continue to mash everything together until you have a nice, soft, workable dough.

Once the dough is done, flour your work surface well. Divide your dough into 4 to 8 equal pieces (depending on how large you want your flatbread to be) and start rolling the dough, one at a time, with a rolling pin.
Flour the flatbread as you go so it doesn’t stick to anything. The dough should never be too firm. It should be soft, but not so sticky you can’t work with it easily.

Roll the dough to a generous ¼ inch thickness. Spray each side with an oil sprayer with a light spritz of oil, then place the flatbread in your air fryer.

Cook at 400 F. for about 6 minutes (time can vary by air fryer)

If cooking this on a stovetop, you’ll need to use more oil to cook this in a skillet. A non-stick pan will be easiest, but any pan will work.

Can Flatbread Be Frozen?
Yes, it can! You may want to put a small piece of parchment between each flatbread to avoid the pieces freezing together, but they will keep well in an air-tight container for up to 4 months.
Storing Sweet Potato Flatbread
These are best kept in the fridge. They will keep for up to 3 days. Just make sure to wrap them well.

Flatbread Pizza
These make great pizza crusts! Make them to the size you prefer, cook them and then add toppings to bake again.
For a larger pizza, you’ll need 3 to 4 cups of sweet potato. Multiply the recipe as needed.

Equipment

Ingredients
- 1 cup sweet potato (cooked and mashed for measuring)
- 1¼ cup oat flour (gluten free if needed)
- ½ tsp. salt
Instructions
- Mix all the ingredients together in a mixing bowl, adding as much flour as you need (beyond the amount called for), until you get a nice, soft but workable dough.
- Divide the dough up into equal portions.
- Working one portion at a time, roll the dough out to a thick ¼ inch thickness. Spritz both sides with an oil sprayer and transfer to your air fryer or skillet.
Air Fryer Cooking
- Cook at 400 F. for 6 minutes (times may vary by appliance)
Skillet Cooking
- Heat some oil in a skillet and cook the flatbread until it's nicely browned.
- Cool and serve.
Have you tried this with pumpkin? I wonder if it’ll work
Sara – I have not. But pumpkin has more water in it, so my guess is that you would need more flour to compensate. Let me know if you try it!
