Mulling spices are a fantastic mix to have on hand this time of year. They can be used for multiple recipes and can even be given as gifts.
This spice blend was made specifically for making hot apple cider. But you can use it for so many other things!
What Are Mulling Spices?
Mulling spices are a mix of whole or ground spices you can use to flavor warm drinks, (hot apple cider is most common), wine, or tea. In drinks, the spices are steeped much like regular tea to flavor the juice or wine.
What Spices Are In Mulling Spices?
Apple cider spice mix typically includes cinnamon, allspice, cloves, nutmeg, and ginger. This particular recipe doesn’t have allspice simply because the allspice you get in the States if very different from what I can get here in Spain. If you want to add it, you can add a half to one tablespoon to the mix below.

- Peppercorns (whole)

Ground Spices Vs. Whole Spices
If you have used mulling spices in the past and are wondering why this recipe calls for ground spices, let me clarify.
Mulling spices are traditionally used as whole, unground spices. But there are uses for ground spices as well. I’ll give you recipes for both types of mulling spices along with examples of their uses.
Whole Spices
These are ideal for recipes where the spice mix will be simmered or steeped and then removed (drinks, soups, glazes). They infuse flavor gently and won’t leave a residue.
Ground Spices
These are better for recipes where the spices are incorporated into the food or drink, like baked goods, sauces, or oatmeal, as they fully dissolve and distribute the flavor.

How Much Mulling Spices To Use In Mulled Apple Cider
For Whole Spices – Use 1-2 tablespoons of spices.
For Ground Spices – Use 1-2 teaspoons of spices.
Always start out with caution. Mulling spices can be very strong. You can always add more, but once you’ve added it, you can’t take any out. Start small and add to taste.
Whole Mulling Spices
This is an all-purpose recipe for whole mulling spices. This is different than the recipe for ground mulling spice because the ground version was created more specifically for apple cider.
3 cinnamon sticks (or about 1 tablespoon of broken pieces)
1 tablespoon whole cloves
1 tablespoon whole allspice berries
½ tablespoon whole star anise (optional)
1–2 teaspoons grated nutmeg (or ½ teaspoon ground)
2 teaspoons dried orange peel (optional)
1 teaspoon dried ginger slices or fresh ginger
Mix them all together and pack them up for future use.

How To Make Mulling Spices
Combine all the spices in a small bowl.
Stir until the mixture is well combined.
Store the apple cider spice mix in an airtight container.
How To Store Mulling Spices
Store mulling spice in an airtight container, away from heat and light. It will keep for up to six months.

Apple Cider Spice Mix
Ingredients
- 3 tbsp. ground cinnamon
- 1 tbsp. ground cloves
- ½ tbsp. ground nutmeg
- ½ tbsp. ground ginger
Instructions
- Combine all the spices in a small bowl.
- Stir until the mixture is well combined.
- Store the apple cider spice mix in an airtight container, away from heat and light. This mix can last up to 6 months.
