Greek avocado toast is avocado toast with fresh tomatoes, cucumbers, feta cheese, and some seasoning, both in the mashed avocado and on top of it. It’s a lemony, tangy avocado toast that will put a little zing in your morning step.

  2. Mortar and pestle

  • Greek yogurt or plain yogurt

  • Fresh thyme
  • Minced green bell pepper
  • black olives or Kalamata olives
  • Red onion
  • Red pepper flakes – or hot sauce if you prefer that.
  • Fresh cilantro
  • Sun-dried tomatoes

What’s On This Greek-Style Avocado Toast?

Avocado – Make sure it’s perfectly ripe so that it’s easily mashable.

Whole grain bread – 100% whole grain with no added sugar.

Lemon juice – Fresh squeezed works best.

Extra virgin olive oil – Make sure it’s a good quality oil.

Garlic cloves – You can use as much as you want, but with such a small amount of mash, one clove is about right. Taste the mash and season it to your liking.

Grape tomatoes – You can use any type of tomatoes you want. It’s about three grape tomatoes per slice of bread, which is probably about two tablespoons worth per slice of bread.

Cucumber – Here again, you can use as much or as little as you like.

Crumbled feta cheese – This can be any type of feta, cow, goat, sheep, or a combination.

Fresh basil leaves – Or fresh parsley, or fresh dill for garnish – optional.

Sea salt and black pepper  – Add to taste.

How To Make Greek Avocado Toast

Toast the Bread

Collect all your ingredients and toast the bread slices until they reach your desired level of crispness.

Prepare The Avocado Spread

An avocado in a mortar.

Cut the avocados in half and scoop the flesh of one half into a bowl.

Avocado mashed with a mortar and pestle.

Mash the avocado with a fork, leaving it slightly chunky for texture.

Adding minced garlic to the mortar for grinding into the avocado.

Add lemon juice, minced garlic, salt, and pepper. Mix well to combine. Taste and adjust the seasoning as needed.

Assemble The Avocado Toast

Spread half the amount of the prepared avocado mixture onto each slice of toasted bread.

Add Toppings

Arrange tomato and cucumber on top of the avocado spread, then drizzle a little extra virgin olive oil over the assembled toast. Sprinkle crumbled feta cheese on top of each toast. If desired, garnish with fresh basil leaves or dill for added flavor and a pop of color.

Storing Leftovers

This isn’t really something you want to store for very long because once it’s made, the bread can get soggy. But if you must store it, do so in an airtight container and keep it in the fridge for up to twenty-four hours max.

Ingredients

  • ½ medium ripe avocado
  • 2 slices whole grain bread (no added sugar)
  • 1 tbsp. lemon juice
  • 2 tsp. extra virgin olive oil
  • 1 medium garlic clove
  • 6 medium grape tomatoes (quartered)
  • 2 tbsp. minced cucumber
  • 2 tbsp. crumbled feta cheese
  • fresh basil leaves (or dill)
  • salt and pepper to taste

Instructions

Toast The Bread

  • Collect all your ingredients and toast the bread slices until they reach your desired level of crispness.
