This clean eating banana walnut fudge is a wonderful treat for paleo folks. But you might have to share…

There’s just something about fudge. No matter what kind of day you’ve had, no matter how incredibly amazing or downright dreadful it’s been, fudge seems to be the perfect fit for just about every occasion. At least, in my humble opinion anyway.

Fudge also makes a wonderful gift! And since Valentine’s Day is right around the corner, I figured it was only right that I share this recipe in honor of this great day of love.

Let’s face it, love is amazing! For better or for worse, it changes everything. Let the chips fall where they may, you just can’t stop it. It’s an incredible force. I’m not just talking about the romantic sort of love (although that’s a beautiful thing as well!). I’m talking about the bigger picture. The love that transcends time, space and life itself. And at the risk of sounding like a 60’s California hippie, “love totally rocks, dude”!

I know of no greater love than the love of a mother for her child. But there is also the love shared between best friends, the love of self, the love shared between lovers and couples the world over. Regardless of how you experience it, you have to admit that love can do amazing things, and nobody should ever be without it. I truly believe we need love to survive.

So, even if you don’t have somebody to share a romantic love with this holiday, remember that love comes in all shapes and sizes. And in this particular case, I think I found it in a box of fudge. (Just sayin’….)

Clean Eating Banana Walnut Fudge

Ingredients

  • ½ cup coconut oil
  • cup unsweetened cocoa powder
  • 1 medium banana (on the riper side)
  • 10 medium medjool dates
  • 1 tsp. pure vanilla extract
  • walnuts (optional for garnish)

Instructions

  • In a small sauce pot, melt the oil.
  • Whisk in the cocoa powder while the oil is still warm.
  • In a food processor, blend the banana, dates and vanilla extract.
  • Add the chocolate to the processor and blend until smooth and well combined.
  • Pour into a small, parchment lined baking dish and place dish in the refrigerator for at least 2 hours.
  • Cut into 24 pieces (a pizza cutter works great)
  • Store in refrigerator forup to 4 weeks.

  2. Hello! This sounds really delicious. Thank you for sharing. I have never purchased dates before – I wouldn’t even know what to look for or how to choose them at the grocery. Can you offer any suggestions? Also, what does it mean by “10 dates, blended”… what does “bleneded” mean? Thank you so much for any help you can offer. 🙂

      You buy dates (preferably medjool dates) in a package at the store. Blended means blended in a blender.

      You can lesson the banana flavor by using bananas that are just done being green.

    YUM! I’ll have to try this! Do you think using dried figs (rehydrated) would work as well? I think it could give it a really interesting flavour combo, with the bananas and chocolate – and maybe I’ll even try adding some espresso powder! 😀

  10. I was wondering if I can use olive oil instead of coconut oil? Does it make a huge difference in flavor if I use olive oil?

      It’s not a good idea. The olive oil doesn’t harden like coconut oil. You may end up with banana walnut fudge SAUCE instead.

  11. I’ve made this twice now. Making a third batch today. I love it! I’m trying to get myself off of refined sugar completely and to do that successfully, I need a “treat” of some kind that will make me feel like I am getting a sweet fix without the bad stuff. This fits the bill! My best friend made it without dates since she didn’t have any and just added an extra banana. She said it turned out amazing! Thanks for a great recipe.

      Cherie – You can try it, but I doubt it. Butter doesn’t quite firm up the way coconut oil does.

    I made this recipe last night and it was delicious but… the fudge didn’t harden and it’s more of a thick sauce..I added tbsp. of almond butter and use chocolate protein powder instead of cocoa…Do you think that could have messed with the texture?

    I’m definitely going to try again and maybe make the recipe with same ingredients.

  15. This recipe is so wonderful, I give my children a piece of this with breakfast – good fats, good start for them.

    Like everyone I have a question about ingredient substitution, have you used other fruits in place of the banana? I’m going to try a mix of berries and will update on how it went, but I was just wondering if you had luck with anything else.

      Oliando – No, I haven’t tried it. The banana gives the fudge some creaminess as well as some healthy fats. It’s hard to get that from other fruits. If you use a banana that is just past being green, the banana flavor won’t be as strong and you can try also adding some berries. But I’m not sure this would do all that well without the banana. I could be wrong though, I’ll have to try!

  16. I absolutely love this recipe! Used 50:50 cocoa powder : carob, which made it a little sweeter, but it was superb!

      Rebecca – I used a small lasagna pan, but something around the size of 6×6 or 8×8 inches. It’s kinda flexible, so long as the dish doesn’t get too overly big.
