Bacon-Wrapped Zucchini (Air Fryer Recipe)

I know this isn’t a keto or low-carb website, but I do sometimes love to create lower-carb recipes for myself. After all, eating a meal that doesn’t spike your blood sugar is never a bad thing, even if you don’t have blood sugar problems.. This bacon-wrapped zucchini recipe is super easy to make, and cleanup is minimal thanks to your air fryer.

Bacon is a serious weakness for me. Now that I’m living in Spain, American bacon is incredibly hard to find. So when I finally did find it, I came home immediately to make this. I also made some asparagus Orzo salad with bacon, a few bacon and egg wraps, and some bacon-stuffed chicken thighs. Because… meal prep, baby!

What You’ll Need To Make Bacon-Wrapped Zucchini

Large zucchini – Don’t worry too much about the size. Just grab a larger zucchini. Measurements don’t have to be perfect here.

Bacon – Opt for a no-sugar, good quality, bacon.

Chili powder

Ground cumin

Onion powder – Or onion granules.

Garlic powder – Or garlic granules.

Dried oregano

Salt and pepper – To taste.

How to Make Bacon-Wrapped Zucchini

Prep, measure, and cut all your ingredients as indicated.

Sprinkling spice mix over cut zucchini pieces.

Add all of the spices and salt and pepper to taste to a bowl, and stir to combine. Place the zucchini pieces into a mixing bowl, and sprinkle with the seasoning. Toss to combine.

Wrap each piece of zucchini in a piece of bacon, and place seam side down into the air fryer basket.

Air fry at 400 degrees for 10-15 minutes, or until the bacon is crispy.

Serve alone, over rice (or cauliflower rice), or with toothpicks for a snack.

Pro Recipe Tip

A simple way to size your zucchini pieces quickly and easily is to cut the zucchini into quarter (or smaller), and then hold one piece up to measure against the width of your bacon slices.

Ingredients

  • 1 large zucchini (peeled and then quartered lengthwise and chopped into bite sized pieces)
  • 6 slices no-sugar, good-quality bacon (cut into thirds)
  • ½ tsp. chili powder
  • ½ tsp. ground cumin
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • ½ tsp. oregano
  • salt and pepper (to taste)
