Ingredients
1largezucchini(peeled and then quartered lengthwise and chopped into bite sized pieces)
6slicesno-sugar, good-quality bacon(cut into thirds)
½tsp.chili powder
½tsp.ground cumin
½tsp.onion powder
½tsp.garlic powder
½tsp.oregano
salt and pepper(to taste)
Instructions
Prep, measure, and cut all your ingredients as indicated.
1 large zucchini, 6 slices no-sugar, good-quality bacon, ½ tsp. chili powder, ½ tsp. ground cumin, ½ tsp. onion powder, ½ tsp. garlic powder, ½ tsp. oregano, salt and pepper
Add all of the spices and salt and pepper to taste to a bowl, and stir to combine. Place the zucchini pieces into a mixing bowl, and sprinkle with the seasoning. Toss to combine.
Wrap each piece of zucchini in a piece of bacon, and place seam side down into the air fryer basket.
Air fry at 400 degrees for 10-15 minutes, or until the bacon is crispy.
Serve alone, over rice (or cauliflower rice), or with toothpicks for a snack.
