How To Make Stuffed Sweet Potatoes (Step-By-Step Instructions)
- Heat oven to 425°F or prep a microwave.
- Prick the sweet potato. Rub with oil and a pinch of salt.
- Bake 45 to 55 minutes until very tender, or microwave 6 to 8 minutes, turning once.
- Heat 1 tsp. oil in a small skillet. Brown turkey 3 to 4 minutes.
- Add the onion and cook for 1 to 2 minutes. Stir in the garlic, apple, rosemary, thyme, smoked paprika, salt, and pepper. Cook 2 to 3 minutes more.
- Stir in spinach, and lastly the walnuts.
- Whisk honey, Dijon, vinegar, and a tiny pinch of salt.
- Split the baked sweet potato open, fluff with a fork if you like, mound on the turkey mixture, and drizzle the dressing over the top.

- 1 small garlic clove (pressed or minced)
- ¼ cup finely diced apple
- ¼ tsp. ground rosemary
- ¼ tsp. dried thyme
- ¼ tsp. paprika
- ¼ tsp. salt
- ¼ tsp. ground black pepper
- ¾ cup frozen spinach (or 1½ cups fresh)
- 2 tbsp. chopped walnuts
Dressing
- 1 tsp. honey (or any sweetener you prefer)
- 1 tsp. Dijon mustard
- 1 tsp. apple cider vinegar
- 1 pinch salt
Instructions
- Heat oven to 425°F or use a microwave.
