Stuffed Sweet Potatoes For One

Dressing

honey
(or any sweetener you prefer)

apple cider vinegar

Instructions
Heat oven to 425°F or use a microwave.
Prick the sweet potato. Rub with oil and a pinch of salt. Bake 40 to 55 minutes until very tender, or microwave 6 to 8 minutes, turning once.
While the sweet potato cooks, heat 1 tsp oil in a small skillet. Brown turkey 3 to 4 minutes.
Add onion and cook 1 to 2 minutes. Stir in garlic, apple, rosemary, thyme, smoked paprika, salt, and pepper. Cook 2 to 3 minutes.
Stir in spinach.
Fold in walnuts.
Whisk maple, Dijon, vinegar, and a tiny pinch of salt.
Split the sweet potato, fluffing it with a fork if you like. But that's optional.
Mound the turkey mixture over the sweet potato. Drizzle on the dressing.
Top with a few fresh apple pieces for garnish (optional)
