What Is Compound Butter?

Compound butter (also known as flavored or herbed butter) is regular butter blended with herbs, spices, or aromatics. It enhances flavor, adds richness, and looks beautiful when sliced into coins. You can make it savory or sweet, dairy or vegan — it’s one of the easiest kitchen upgrades there is.

Why You’ll Love Making Compound Butter

  • 100% customizable — endless flavor combinations
  • Freezer-friendly and perfect for meal prep
  • Elevates simple dishes like steak, potatoes, and veggies
  • Works with regular or vegan butter
  • Takes just 5 minutes to make

Standard Ratio For Compound Butter

For ½ cup (1 stick or 113 g) butter, use about 2 to 3 tablespoons of total mix-ins.

That means:

  • 1 to 2 tablespoons finely chopped fresh herbs or aromatics (like garlic, parsley, chives, or dill)
  • 1 teaspoon dried herbs or spices, if you’re using dried instead of fresh
  • 1 to 2 teaspoons acidic or liquid flavor (like lemon juice, vinegar, honey, or maple syrup)
  • A small pinch of salt and pepper to taste
A graphic showing general conversions for compound butters.

General Conversion

  • Fresh herbs: 3 parts fresh = 1 part dried
  • Aromatic add-ins (garlic, zest, onion): about ½ to 1 teaspoon per ½ cup butter
  • Sweet or bold butters: 1 to 2 teaspoons sweetener, ¼ teaspoon spice

Texture Tip

If the butter starts to look too loose or shiny when you’re mixing, chill it for 5 minutes, then continue blending. The ratio above keeps it spreadable but not greasy.

Important Note About These Compound Butter Recipes

These recipes are generally considered to be “lightly flavored”. This is done on purpose. The level or intensity of flavoring you add will often depend on the intended use. So for that reason, I flavored these lightly, so that you can add more as you see fit. It’s fine to “add to taste” on all of these recipes. Definitely taste before you wrap and chill your compound butter.

What You’ll Need To Make Compound Butter

  • Butter (regular or vegan) – softened to room temperature
  • Herbs and spices – fresh or dried
  • Flavor add-ins – citrus zest, garlic, honey, etc.
  • Mixing bowl and spatula
  • Wrapping – Parchment paper, plastic wrap, or silicone wrap for shaping. Butter molds work too.

Yes, just reduce or omit added salt.

What is the difference between compound butter and regular butter?

Regular butter is the plain stuff you buy at the store. You can buy it with or without salt. Compound butter is butter that has had other additions mixed in while the butter is still soft. Think of it as “flavored butter.”
