You can season the chicken any way you like. I just used salt and pepper, but if you prefer spices, feel free to use any you prefer.

Yes and yes. But once it’s chilled, I wouldn’t try to warm it up again. Eat it right after making it for it to be mildly warm, or eat it cold. Reheating doesn’t really work for this recipe.

About The Ingredients

Celery – The size of the stalks doesn’t matter because you’ll be cutting them.

Grapes – The typical type of grapes for a salad like this are red grapes. But you can use any type of grape you like best.

Chicken thigh – Make sure it’s boneless and skinless for the easiest cooking and shredding. And yes, you can use a chicken breast if you prefer that.

Greek yogurt – Any type of plain yogurt will work, even dairy-free yogurt. If you want this even creamier and don’t mind the extra calories, you can use sour cream instead.

Almonds – You can use other types of nuts if you prefer. Walnuts are a great choice. I used raw almonds, but roasted will work too.

Lemon – Both the juice and the zest.

Dijon mustard – No sugar added.

Fresh parsley – Chopped fine.

Extra virgin olive oil – Or any light-flavored oil you prefer to use.

Salt and pepper – As much as you like.

How To Make Chicken Salad With Grapes

Rub the chicken with salt and pepper (or any spices you want to use) and leave it for 20 minutes at room temperature. Grease a grill pan with olive oil and fry the chicken thigh on both sides until browned, and the chicken reaches at least 165 F. on a meat thermometer. Cut it into strips and set it aside.

Cut each grape in half or into quarters, as you like. You can remove the seeds if your grapes have them. Chop your almonds as well.

Grate and juice the lemon into a bowl. Add the zest to the yogurt and mustard. Add a pinch of salt and stir the sauce until smooth.

Place prepared ingredients in a salad mixing bowl, add chopped parsley, and mix. Taste the salad for salt and leave it in the refrigerator for 1 hour.

Place whole-grain crackers and lemon slices on the edge of a serving plate. Arrange the salad in a loose mound, drizzle with the dressing, and serve.

Storage

Leftovers can be stored for no more than two days in an airtight container in the refrigerator.
