This celery salad with citrus and walnuts is one of the most refreshing salads you’ll eat this season!

The thing I’ve always hated about celery is that you generally only add a stalk or two to whatever you are cooking, and then the rest sits in the fridge and tends to go bad. But that’s all changed now.

Celery salad is having a revival on TikTok these days, and for good reason. While celery doesn’t get a ton of credit for being a great vegetable, it actually is, especially in a salad.

          Celery stalks – Choose medium-sized stalks with or without leaves.

          Honey – Or any other sweetener you prefer to use.

          Lemon juice – The best flavor is freshly squeezed, but bottled 100% juice will work in a pinch.

          Plain yogurt – This can be dairy-based or plant-based. Your choice. Just make sure it’s plain and unsweetened.

          How To Make Celery Salad

          Chop all fruit and veggies into small, bite-size pieces.

          Chop your celery and grapefruit and place in a large mixing bowl.

          Add the walnuts and honey.

          Ingredients

          Salad

          • 9 medium celery stalks
          • 1 large grapefruit (or oranges, or mandarins)
          • 1 cup chopped walnuts

          Dressing

          • 1 tsp. honey
          • 1 tsp. lemon juice
          • ¼ cup plain yogurt

          Instructions

          • Chop your celery and grapefruit and place in a large mixing bowl.

          2. wow.. I never thought this combination would be so yummy! We subbed sunflower seeds for walnuts, honey for agave, and added 1 cup edamame.. super yummy!

          5. I added cucumber, sunflower seeds and one thinly shredded carrot to mine. The carrot makes it pretty and helps me get more veggies into my day.
