A head of cauliflower mimics the look of the human brain, kinda like walnuts. So if you add a bit of color with spices, you get a delicious vegetable that resembles a human brain. A classic head of roasted cauliflower will look the same, but the flavor and color are a natural flavor and color. How To Make Roasted Cauliflower Brains

Note that you may need to cover the cauliflower with aluminum foil while it cooks through. Then remove in the last 10-25 minutes of roasting to add caramelization. Tent the base with foil or roast on a trivet as needed to keep the base from burning.

Can I use an air fryer?

Yes — roast at 375°F, flip gently halfway, but use smaller heads only.

Is the glaze necessary?

No. The cauliflower is flavorful without it. Glaze is purely visual.
