When I found this video, I did the Snoopy Dance all over my living room. I may have even done a “Tom Cruz” on my couch. I’m not sure. My memory is conveniently fuzzy at the moment.
If you live the clean eating life style, but miss your occasional treats, here’s a no guilt treat for ya, Agave Sweetened Marshmallows!
Admit it. You just did a little Snoopy Dance in your chair.
Here’s the recipe in case you didn’t have a pen and paper handy.
Also check out this recipe I did as a guest post for Pumpkin Spice Marshmallows. Yum!
UPDATE: Since publishing this recipe 2 years ago, I have learned that gelatin is in fact, not clean. However, I will say that if you absolutely must have marshmallows, these are a heck of a lot better than the ones you can buy! For that reason, I will leave this one and only non-clean recipe on my blog. Hope you enjoy it!
Ingredients
6 tbsp water
2 packets unflavored gelatin
1 cup agave (you can also use honey if you prefer)
2 tsp pure vanilla extract ( I use bourbon vanilla)
Directions
Step 1 – Stir gelatin into water in a small bowl. Microwave for 30 seconds.
Step 2 – While that’s in the microwave, pour your agave into a mixing bowl.
Step 3 – Add vanilla.
Step 4 – Add warm gelatin/water mixture.
Step 5 – Blend for 12-15 minutes until the mixture is white and fluffy and has quadrupled in size.
Step 6 – Coat a casserole dish with cornstarch.
Step 7 – Scoop marshmallow mixture into casserole dish and smooth top so it’s level with a spatula.
Step 8 – Let sit for a minimum of 3 hours. Overnight is best.
Step 9 – Turn out onto a surface dusted with cornstarch.
Step 10 – Slice into desired size.
Step 11 – Store in a plastic bag.
Eat and enjoy!

Munchkin Helpers
Kids can help by adding ingredients to the mixer (please be sure it’s turned off first), and smoothing the marshmallow fluff in the casserole dish.
Caution: Any time a child is in the kitchen, they will require close supervision. Munchkin Helpers suggestions should be applied with common sense to your own child, taking their own capabilities into account. Do not assume that because it says here that your child can do something, that they can, in fact do it. Please use common sense when in the kitchen with your child(ren).
