Dry Ingredients
1¾cupsoat flour(gluten-free if needed)
1tsp.baking soda(not powder)
¼tsp.salt
2tsp.ground ginger
1tsp.ground cinnamon
⅛tsp.ground cloves
Wet Ingredients
½cupsoftened butter(or melted coconut oil)
½cupcoconut sugar
¼cupmolasses
1largeegg
1tsp.pure vanilla extract
2tbsp.coconut sugar
Instructions
Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
In a medium mixing bowl, whisk the dry ingredients together.
In another bowl, whisk the wet ingredients until smooth and fluffy.
Stir the dry ingredients into the wet mixture.
Scoop 1 tablespoon mounds and bake for about 12-15 minutes, until the edges are just set and the centers look soft. Once baked, cool these completely on a cooling rack before removing from the parchment paper.Store in the fridge in an air-tight container.
