Warm the oil in a large skillet over medium-high heat.
Then place the chicken thighs into the pan. Brown them on both sides. The color you achieve on this step is the color you will have in the finished dish. So if you want that golden brown look, you'll want to do a good job of browning the chicken now.
Add the mushrooms to the skillet and cook until wilted.
Once wilted, add in the garlic and cook for one minute.
Add the soy sauce and balsamic vinegar. Stir to combine.
Season with salt and pepper and cook until the chicken is fully cooked. (At least 165 F.)
Creamy Sauce For Chicken
Pour in the chicken broth.
Add in the yogurt.
Stir well to combine all the sauce ingredients.
Stir in the fresh parsley.
Serve by itself, over rice, quinoa or even noodles.
