In a mixing bowl, combine the buffalo sauce and shredded chicken. Toss until the chicken is well coated with the sauce.
Take one whole wheat pita and carefully slice it open to create a pocket.
Spread a tablespoon of buffalo sauce inside the pita pocket.
Add a layer of shredded mozzarella cheese inside the pita.
Stuff the pita pocket with a quarter of the shredded buffalo chicken.
Sprinkle diced onion on top of the chicken.
Repeat steps 2-6 for the remaining three pitas.
Optionally, you can add additional blue cheese sauce/dressing or chopped chives as a garnish on top of the chicken and onions.
Place the filled pitas on a baking sheet and warm them in the oven at 350°F (175°C) for about 5 minutes, or until the cheese has melted and the pitas are heated through.
Once the cheese has melted, remove the pitas from the oven and let them cool for a few minutes.
Serve the buffalo chicken whole wheat pitas warm.
