These watermelon feta skewers are a perfect summertime appetizer and simple to whip up for a party. They also make a fantastic hot-day snack.

watermelon
(Cut into 24, one-inch chunks)

extra virgin olive oil

tsp.
lime juice

sea salt

feta cheese crumbles

tbsp.
fresh, chopped mint
Instructions
Cut the watermelon as instructed above, and chop the mint.
Add the olive oil, lime juice, and sea salt to a small bowl and stir to combine.
Place 2 chunks of watermelon onto each skewer, and arrange skewers on a platter.
Drizzle the liquid mixture over the watermelon skewers evenly.
Sprinkle with feta and chopped mint.
Cover and refrigerate until ready to serve.
