Ingredients
1½lbs.baby potatoes
4mediumgarlic cloves(minced)
1mediumlemon(juice only - 1 to 2 tbsp. if using bottled juice)
¼cupextra virgin olive oil
1tsp.dried oregano
1tsp.dried thyme
1tsp.ground rosemary
salt and black pepperto taste
Optional Garnishes
chopped, fresh parsley
crumbled feta cheese
Instructions
Preheat your oven to 400°F (200°C), and gather all your ingredients.
In a large mixing bowl, combine all the ingredients.
Arrange the seasoned potato wedges in a single layer on a baking sheet. Place the baking sheet in the preheated oven and roast the potatoes for about 40-45 minutes, or until they are golden brown and crispy on the outside and tender on the inside. Flip the potatoes halfway through the cooking time to ensure even browning.
Once done, remove the roasted potatoes from the oven. Taste and adjust the seasoning if needed.
Transfer the potatoes to a serving dish, and add garnish if you want it just before serving.
