Base
1wheelbrie cheese(or a wheel of vegan brie - I used VioLife)
Topping
1tbsp.extra virgin olive oil(or coconut oil)
½cupchopped and pitted Medjool dates(approximately 3 large medjool dates)
¼cupchopped walnuts
1tbsp.maple syrup(or honey for non-vegan)
½tsp.ground cinnamon
¼tsp.ground nutmeg
1pinchsalt
Optional Garnishes
fresh rosemary sprigs
grated orange zest
cracked black pepper
pomegranate seeds(for color)
Instructions
Preheat oven to 375°F (190°C). Line a small baking dish with parchment paper or use a brie baker.
In a small skillet over medium heat, melt coconut oil. Add chopped dates and water, stirring 2–3 minutes until the dates soften and form a thick paste.
Once thickened and paste-like, stir in the walnuts.
Then add the spices and mix well.
Place the brie (or vegan brie) on the prepared pan. If desired, lightly score the top with a knife to help the topping soak in.
Spoon the topping mixture evenly over the brie, gently pressing it down.
Bake for 8-10 minutes for vegan brie, or 15–20 minutes for regular brie, until the brie is soft. Let cool 5 minutes (to firm slightly), then serve with apple slices or whole-grain crackers.
