Ingredients
14oz.artichoke hearts(drained - quartered if you prefer, but not necessary)
1cupchopped tomatoes(or halved cherry tomatoes)
½cupKalamata olives(pitted and chopped)
½cupchopped red onion
1cupchopped cucumber(your choice if you peel it or not)
½cupfresh, chopped parsley
½cupfresh, chopped basil
¼cupextra virgin olive oil
1tbsp.fresh lemon juice
2tbsp.balsamic vinegar
1tsp.prepared yellow mustard(no sugar added)
1tsp.garlic powder
½tsp.dried oregano
½tsp.salt
½tsp.ground black pepper
Instructions
Chop all the veggies as indicated.
Drain the artichoke hearts.
In a large mixing bowl, combine the artichoke hearts, tomatoes, olives, red onion, and cucumber, along with the fresh herbs.
In a small bowl, whisk together the olive oil, lemon juice, balsamic vinegar, mustard, garlic, oregano, salt, and black pepper until you have a smooth dressing.
Pour the dressing over the salad ingredients and toss gently to coat. Let the salad sit for about 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.
