10 Popsicle sticks (And/or a popsicle mold)
Ingredients
15oz.can full-fat coconut milk
3cupspineapple chunks
2tbsp.maple syrup
¼cuplemon juice
1½tbsp.lime zest(optional)
¼cupshredded coconut (optional)
Instructions
Gather and measure all the ingredients. Slice off the top and rind from a whole pineapple. Cut two triangle-shaped chunks per popsicle and save them for later.
With the rest of the pineapple, cut it into smaller pieces and place them into a high-speed blender or a food processor. Add the coconut milk, maple syrup, lemon juice, and grated zest (if using) into the blender and blend until all the ingredients mix.
Place one pineapple chunk inside each popsicle well in your mold. Pour the blended mix into the mold, add another pineapple chunk, position the popsicle sticks into the popsicle wells, and place the mold in the freezer for at least 6 hours to overnight.
If desired, grate a little extra lime zest and shredded coconut over each popsicle when serving.
