Herb-Infused Mediterranean Turkey Breast: A New Thanksgiving Tradition

Ingredients
2¼lb.turkey breast with skin
4mediumgarlic cloves(minced)
⅓cupchopped, fresh parsley
1mediumlemon(zest and juice)
¼cupextra virgin olive oil
1tsp.paprika(regular, not smoked)
1tsp.ground cumin
1tsp.ground coriander
1tsp.dried oregano
1tsp. dried thyme
1tsp.salt
½tsp.ground black pepper
½tsp.crushed red pepper flakes(optional, but delicious)

Preparation
Preheat the oven to 375°F (190°C) and collect and measure all your ingredients.
Herb and Spice Marinade
In a glass measuring cup, measure the oil, and then add all the spices, garlic, lemon juice, and zest. Stir it all together until well mixed.
Prepare the Turkey
Place the prepared turkey breast in a roasting pan or on a baking sheet.
Carefully loosen the skin of the turkey breast, making sure not to detach it completely. You want to create a pocket between the skin and the meat.
Rub half of the mix as you can evenly under the skin.
The other half can be evenly spread over the top of the entire breast surface. Set in the fridge for 30 minutes.
Roasting
Roast the turkey in the preheated oven for approximately 1 hour 20 minutes to 2 hours, or until the internal temperature reaches 165°F (74°C) when tested with a meat thermometer. Keep an eye on this so it doesn't overcook and dry out. Cooking time will vary based on size and thickness of your turkey breast.IMPORTANT: Once the spices have browned and the top of the breast is a nice golden color, make sure to cover the turkey breast loosely with a piece of aluminum foil. This will keep it from burning.
Rest and Serve
Once cooked, remove the turkey from the oven and let it rest for about 10-15 minutes. Slice the turkey breast and serve it with your favorite Mediterranean-inspired sides, such as a Greek salad, roasted vegetables, or couscous.
