Peel and de-seed the peaches but save a couple and cut them into chunks. Save them for later.
Place the remaining peaches into a highspeed blender and add the coconut cream and the maple syrup.
Blend everything until the ingredients are smooth.
In the popsicle mold, place one peach chunk in each one. Then pour the blended mixture into the mold until it's about halfway filled. Add another peach chunk, and finish filling up the mold. Insert the popsicle sticks.
Freeze overnight or at least 6 hours or until it's firm.
