Ingredients
Crust
1½cupsalmond flour
1½cupsoat flour
¾cupoats
½tsp.salt
½cupbutter(melted, or virgin coconut oil in liquid state)
⅓cuppure maple syrup
Strawberry Filling
1lb.fresh strawberries(cleaned and de-stemmed)
3tbsp.pure maple syrup
1tbsp.arrowroot powder(or cornstarch)
1tsp.lemon juice

Prep
Preheat the oven to 375 F, line a 9x12 inch pan with parchment paper, and measure all your ingredients.
Crust And Topping
In a large mixing bowl, mix together the almond flour, oat flour, rolled oats, salt, maple syrup, and melted butter (or oil). Mix by hand for about 5 minutes or until the mixture forms a dough. Reserve ¼ cup of the mixture for the topping and set aside.
Transfer the remaining dough mixture to the baking pan. Press it to form the bar base. (you should aim for about a ½ inch thickness.).Bake it for about 5-7 minutes or until it looks golden brown. Set it aside.
Strawberry Filling
While the crust is baking, coarsely chop the strawberries and put them in a pot over medium-low heat. Add the starch (arrowroot or cornstarch), lemon juice, and maple syrup.
Stir until the strawberries soften. It should take about 5-8 minutes until the mixture is slightly thickened and strawberries release some of their juices.
Assembling The Bars
Pour the strawberry filling on top of the bar base, using a spoon or spatula to spread it evenly over the base.
Crumble the reserved dough over the top of the filling, covering it as evenly as possible. Bake for about 35-45 minutes or until the crumbles on top look golden brown.
Allow bars to cool completely before cutting into them, otherwise, they will fall apart. To speed up this process you can store this on a heat-safe surface in the fridge.
Serve as is, or over a scoop of vanilla ice cream.
