Adjust the thickness on your mandolin to at least a ¼ inch thick, then lay it across a bowl.
Cut the zucchini down to a manageable size.
Slice the zucchini on a mandolin.
Lay them all out in a single layer on your dehydrator rack and dehydrated for the amount of time called for by your appliance. On mine, it's usually 12-14 hours.
Serve with salsa or hummus.
