Ingredients
½lb.dry pasta(cooked to package directions)
½cupchopped Kalamata olives(or black olives)
¼cupchopped sun dried tomatoes(drained if packed in oil - I used dry OR black olives)
¾cupchopped canned artichoke hearts(marinated - no sugar added)
¼cupoil(anything light in flavor)
¼cupbalsamic vinegar
½tsp.garlic powder
1tsp.dry oregano(or 1 tbsp. fresh, chopped)
¼cupchopped, fresh, Italian parsley(flat leaf - optional)
In a large pot, boil the pasta to package directions in salted water. When done, drain and rinse with cold water to cool your pasta. Transfer to a large bowl.
Add all remaining ingredients to the bowl and toss to combine.
Adjust salt and any seasonings to your liking and serve.
