A delicious, decadent, holiday side dish everyone will love! Note that if you multiply the recipe more than twice, you'll want to back off a bit on the dried thyme. Use 1/2 a tsp. for every two multiples.
Slice your mushrooms thin.
Over low to medium-low heat, sauté the garlic in the oil for about 1 minute.
Add the mushrooms, parsley and thyme. Keep the heat low.
When the mushrooms become soft, add the brie and stir until fully melted. It helps to cut the brie into smaller pieces as you stir.
Serve as a side dish, or even over a slice of toast.
Top with a bit of fresh parsley for garnish.
