This is a fun way to impress guests! Everything looks fancy served in half of a squash and this is no exception! But you don't have to serve it that way. If it's easier, scoop the cooked squash into the quinoa salad and stir. Serve in a regular bowl.

Ingredients
2cupscooked quinoa(cooked with vegetable broth instead of water)
1tbsp.garlic powder
1cupchopped red bell pepper
½cupchopped red onion
1tbsp.balsamic vinegar
½cupchopped fresh basil
1tsp.salt
½smallspaghetti squash(seeds scooped out and cooked)
Combine all the ingredients, except the spaghetti squash, in a medium to large mixing bowl and stir well to combine.
Scoop the quinoa into the spaghetti squash halves and serve.
If you prefer, you can simply scoop the flesh of the squash out into the quinoa bowl and mix it into the quinoa salad. Scooping it into the squash halves is more for presentation.
Season with salt and pepper and enjoy.
