Ingredients
1cupsoaked cashews(soaked for 4-24 hours)
1cuppumpkin puree(not pumpkin pie filling)
1cupvegetable broth(If you want to use chicken broth, use ½ broth and ½ water)
2tsp.nutritional yeast(optional)
½tsp.salt
½tsp. ground nutmeg
½tsp.ground cinnamon
½tsp.ground black pepper
½tsp.garlic granules(or garlic powder)
1lb.pasta(cooked to package directions)
Instructions
Soak your cashews for a minimum of 4 hours. You can soak them overnight if it's easier, but they must be soaked for this recipe to work. The minimum for that is 4 hours.
Place all ingredients (except the pasta, of course), into a high-powered blender.
Blend until smooth.
Add water or more broth to get your desired consistency. Blend again to combine.
Pour over cooked pasta and serve.
