Instructions
Preheat oven to 400 degrees F.
In a large mixing bowl, blend all ingredients with a whisk, except for the fresh fruit.
Line your muffin tin with muffin cups (the paper kind)
Fill the muffin papers half way.
Sprinkle a little fruit in the middle.
Fill the muffin cups the rest of the way with batter.
Place in oven and bake for 10 minutes.
At this point, your muffins should have a nice golden glow. To keep them from burning, place a sheet of tin foil loosely over the top.
Continue baking for another 10 minutes. (20 minutes total)
Remove muffins from tin and allow to cool on a cooling rack.
