Slow Cooker Sweet Potato Curry Recipe

Ingredients

  • 8 cups peeled, diced sweet potatoes (no larger than 1/2 inch pieces)
  • 1 1/2 cups sliced carrots
  • 27 oz. canned coconut milk (I used 2 cans that were 13.5 oz. each. I also used full fat, but you can use light coconut milk to cut down on fat if you prefer)
  • 28 oz. can diced tomatoes
  • 1 tbsp. ground cumin
  • 2 tbsp. curry powder
  • 1 tbsp. garam masala
  • 1 1/2 cups dry red lentils
  • 4 cups vegetable broth (or chicken broth, if you prefer)
  • 2 tbsp. garlic powder
  • 2 tbsp. onion powder
  • 4 cups raw spinach leaves (chopped)
  • salt to taste at serving

Instructions

  1. Place all ingredients (except the raw spinach) into your slow cooker insert and stir well to combine.

  2. Turn heat to low and cook for 7-8 hours or until the sweet potatoes and lentils are soft and cooked.

  3. Once cooked, stir in the raw spinach until it is wilted.

  4. Season with salt to taste and serve.
