Ingredients

  • 1 cup buckwheat flour
  • 4 cups unsweetened soy milk (or unsweetened almond milk)
  • 1 tsp. pure vanilla extract
  • 2 large egg whites
  • 3 1/2 cups cottage cheese (1/4 cup per crepe)
  • 14 tbsp. apple butter (1 tbsp. per crepe - see recipe link above)

Instructions

  1. Place you flour in a large mixing bowl.

  2. Add your milk and egg whites.

  3. Add the vanilla.

  4. Mix well.

  5. Pour the batter on to a hot non-stick pan over medium heat. Keep it thin and on the small side.

  6. When cooked, put crêpe on a plate, add cottage cheese and apple butter, and roll so sides overlap holding the crêpe together.
