Southwestern Crustless Quiche

A delicious, lower carb quiche for breakfast!

  • 2 tsp. olive oil (divided)
  • 1/2 cup thinly sliced white onion
  • 1/2 cup thinly sliced red bell pepper
  • 4 large eggs (lightly beaten)
  • 1 tsp. minced garlic
  • 1/2 tsp. ground cumin
  • 1/2 tsp. kosher salt
  • 1/2 tsp black pepper


  1. Preheat oven to 400 degrees F.

  2. Heat 1 teaspoon oil in a small skillet over medium-high heat.

  3. Add onion and pepper to pan.

  4. Cook 10 minutes, or until tender.

  5. Combine onion mixture, eggs, garlic, cumin, salt and black pepper in a small bowl.

  6. Divide evenly between 2 (8 ounce) ramekins coated with remaining 1 teaspoon oil.

  7. Bake for 20 minutes or until set in center.
