Clean Eating Traditional Egg Salad Recipe

This egg salad recipe is perfect for the spring holiday table, or just a middle-of-the-week sandwich! You can also mix it into a green salad or make a breakfast burrito or quesadilla with it! Please note that the recipe timing assumes you have already hard boiled your eggs.

Ingredients

  • 9 large eggs (hard boiled)
  • 1/4 cup mayonnaise (see link above)
  • 1/4 cup red onion (chopped fine)

Instructions

  1. Remove the shells from your hard boiled eggs and chop them into small pieces.

  2. Place the chopped eggs, mayo and onions in a medium mixing bowl and mix until well combined.

  3. Add salt to taste if needed, but it's pretty tasty without!
