This egg salad recipe is perfect for the spring holiday table, or just a middle-of-the-week sandwich! You can also mix it into a green salad or make a breakfast burrito or quesadilla with it! Please note that the recipe timing assumes you have already hard boiled your eggs.
Remove the shells from your hard boiled eggs and chop them into small pieces.
Place the chopped eggs, mayo and onions in a medium mixing bowl and mix until well combined.
Add salt to taste if needed, but it's pretty tasty without!
