Clean Eating Mini Pumpkin Banana Bread

Ingredients

  • 4 cups whole wheat pastry flour
  • 2 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground allspice
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 1 1/2 tsp. baking soda
  • 1/3 cup coconut oil
  • 3/4 cup honey
  • 3 large eggs
  • 2 tsp. pure vanilla extract
  • 15 oz. can pumpkin puree (not pumpkin pie filling)
  • 2 medium ripe bananas (smashed with a fork)

Instructions

  1. In an electric mixer, put the flour, spices, salt and baking soda into the mixer and turn it to it’s lowest setting to combine the dry ingredients.

  2. Slowly add each of the remaining ingredients, one at a time, until you have a smooth batter. It sill be slightly thick.

  3. Divide the batter into 4 equal portions using 4 mini loaf pans size 5 3/4 x 3 1/4 x 2 1/4. Place the loaf pans on a baking sheet for easy transfer.

  4. Bake at 350 F. for 55 to 60 minutes. Check at the 50 minute mark. If the tops are getting too brown, simply place a piece of foil loosely over the tops and finish baking. Doing this may add 5 to 10 minute to the baking time.

  5. Transfer pans to a cooling rack for 1 hour. Turn the loaves out onto the cooling rack and allow to cool fully before slicing.
