Ingredients

  • 1 medium sweet potato (any size for a single serving)
  • 2 tbsp. peanut butter (no sugar added)
  • 1 dash ground cinnamon
  • 1/4 cup fresh blueberries
  • 1 tbsp. maple syrup

Instructions

  1. Cut the sweet potato lengthwise, part of the way through so the bottom stays connected. Squeeze the ends together to open up the cut.

  2. Layer on the peanut butter, then the cinnamon, then the berries and maple syrup.

  3. Serve with a little extra maple syrup and a pinch of salt if desired.
